The Ultimate Morning Sweet–Chocolate Cappuccino Muffins

I have a confession to make and I hope sharing my heart today will not lose me the trust and respect of beloved friends.

So here it is; “sweets,” i.e., cakes and pies and cookies and candy, etc., just aren’t my favorite thing.

Are you still reading or were you so disturbed by that statement that you’ve exited my blog, vowing never to return? Hopefully you’re still with me and I can explain that I don’t dislike sweets at all.  In fact, I think quality chocolate is fabulous, tiramisu cheesecake is a dream, and eating Bluebell Summer Berries ice cream is a gift from heaven!

But where sweets are concerned, usually a “dab will do me.” If given a choice, 95% of the time I’ll pick “real food” or even a salty snack over something sweet.

I especially steer clear of them in the morning.  My stomach needs a little time to wake before it can process a lot of sugar, so things like doughnuts and muffins and pastries are a rare indulgence for me at breakfast time.

But these little muffins are incredible; their sweetness balanced with just the right amount of bitter coffee and semi-sweet chocolate.  I love them and while they’re awfully good with a cold glass of milk, with a fresh cup of coffee, they are amazing!

So here’s what you need…

Chocolate Cappuccino Muffins 

2 cups all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
2 teaspoons baking powder
2 teaspoons instant coffee granules
1 teaspoon cinnamon
1/4 teaspoon salt
1 egg
1 cup milk
1/2 cup butter, melted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips, finely chopped
1/2 cup milk chocolate chips, finely chopped

Combine your dry ingredients in a large mixing bowl.

In a small bowl, mix together your egg, milk, melted butter and vanilla extract.

Add the liquid mixture to the dry and stir just until moistened.

 

Stir in your chocolate until well-combined, then fill greased or paper-lined muffin cups.

For regular-sized muffins, bake at 375 for 20-24 minutes or until golden brown.  Personally, I prefer mini-muffins, (they’re cute, bite-sized, and kid-friendly,) and they should bake at the same temperature for about 10-15 minutes.

Itty-bitty chocolate-cappuccino yumminess…

 
*This recipe will give you 12-15 regular-sized muffins or 30-36 mini-muffins.  And keep in mind that one mini-muffin has about 100 calories, so indulge cautiously…
 
**And DON’T skip chopping the chocolate! 
I’ve tried using whole chips to save time and they sink to the bottom of the muffins. Granted, that makes for a reeeeally chocolaty end to your muffin,
but why not spread that chocolaty goodness around?  

 

Mini-chocolate chips will work, but they aren’t always easy to find, 
especially in semi-sweet chocolate.  When I’ve found them, I’ve used 
them with pretty good results, but finely-chopped chocolate is distributed 
through the muffins much more evenly. Just use a chopper, food processor, 
or blender to do the job for you!
 

These muffins are DELICIOUS!  My family can put away a batch very quickly, but considering how many mini-muffins the recipe makes, they’re perfect for church dinners and potlucks, too!  I always get rave reviews when I bring them along!

So start the coffee maker and whip up a batch of these muffins this morning!  There’s nothing like starting the day with a little sweet indulgence….
